Lazy (wo)man’s chicken pot pie

As my previous post mentioned i made chicken pot pie for dinner tonight for mr. J and I. It was delicious and I have leftovers! woohoo.

Ingredients:

1pkg (2) refrigerated Pie crust

2 cans cream of chicken soup

Frozen mixed veggies

Chicken breast

Directions:

cook chicken breast in the oven @ 350 for approx 1hr (or until fully cooked)

shred chicken breast

In a pot mix both cans of soup with frozen veggies, add shredded chicken, mix until mixture is hot.

Place one of the prie crust on the bottom of either a pie shell or in my case a square casserole dish, pour mixture into the dish, place other pie crust on top.

Bake @350 for about an hour or until crust is nicely browned.

Easy peasy, and ohhhh so delicious!!!!

Stuff (ed)!

Today was a very special day, I got to see my baby for the first time. It was amazing, just seeing (his or hers) little arms, and legs, the baby moved around alot. Jacoby and my mom came along for the appointment. Although Jacoby did not know what was going on, he was so excited. OO-ing and AHHH-ing it was hilarious and heartwarming.

Eventhough he is only one I have begun to teach Jacoby about the baby, Im trying to encourage him to say “Baby” and he knows where “mommy’s baby” is. He will lift up my shirt and look up and smile. I know he doesnt understand but im trying to make it as normal as I can so that when the baby comes hopefully things will go smoothly. He’s very good with other babies, and so far has never had a problem with me holding other babies (knock on wood). He actually very interested in other kids and quite gentle (for the most part).

These last few weeks have been quite difficult with dealing with planning, and executing Jacoby’s first birthday party, Hubs being away for three weeks, me beng sick and very tired, listing the house, showings, and just keeping up with the everyday “stuff”… im exhausted to say the least. I am very glad hubby comes homes tomorrow. It has been a true test of my patience (which im quickly running out of unfortunately). Luckily I have a hair appointment tomorrow and mom is going to watch Mr. J. It should be nice to get pampered and relax for a few hours.

After having a moment to sit and relax after bedtime last night, I thought back on my week(s) and realized that I had been eating out ALOT. Whether it was out- out or at friends and families homes. I tried to think of the last meal i actually cooked and i couldnt remember. So i sat down and planned a couple days worth of menu plans. I got on my “Pinterest” account and pulled up a few recipes that i had “repinned”. Thought maybe its time to try some of these. So tonight I made my lazy man’s (or in my case woman) chicken pot pie. (didnt get this recipe from Pinterest) but its a tried, tested, and true recipe. My mom and I made a ton of these while i was pregnant with Jacoby and I found myself craving it one night and didnt have any left in the freezer. Today i tried it a little differently and made one large “pot pie” instead of individual sized ones, and used store bought pie crust, cuz well frankly im lazy! It was delicious, satisfied my craving, and Monkey Loved it! What more can i ask for…? Leftovers! Yup i have some of those too!

Under the weather

I’ve been neglecting my blog lately and in fact I have had so many things to share. Truth is, i’ve been under the weather lately and trying to get my strengths back to get back to my regular routine.

I’ve been tired, nauseous… yup! IM PREGNANT!

Baby #2 is on it’s way. Im 8 weeks along so it’s still a little early but we are very excited and have made the big announcement to our family and friends. Alot of people seemd a little shocked that we were having them so close together, but thats the way we wanted it, and we couldnt be more thrilled.

With Jacoby’s first birthday only three days away, and this overload of emotions has made me a little bit of a reck. Haha. I cant believe my baby boy is going to be 1… Yikes.

So far this pregnancy has been completly different from Jacoby’s, im very sick, (all day) & very tired, (this could also be because i have a toddler to take care of all day). Its crazy how quickly i’ve began to “show”!

I’m super excited to keep you all updated on my pregnancy and to document everything along the way.

2 months down, 7 more to go! Haha

Blue morning sunshine

This morning I woke up to a rainy dark sky. I decided to get inspired by my dark morning by making a new smoothie.

1/2-1 cup frozen (or fresh) blueberries
1/2 cup trop 50 pomegranate/blueberry juice
1/4 cup plain fat free Greek yogurt
1 tbsp flax
1/4 cup lite coconut milk
Ice

Blend together and enjoy!

SURPRISE!

Last weekend the fam-jam packed up once again. This time we were headed to Toronto! The trip was a secret for months as we were headed to surprise my Bestie (L)! Her Fiance (J) knew about the surprise but she had NO IDEA! I was so excited to go and see her, not only for the surprise, but because this was going to be the first time (L & J) met Jacoby!

Once we landed in the Tdot we rented a car and headed to our Hotel. We stayed at the Fairmont Royal York (such a beautiful hotel) when we got there there were so many people outside and inside the hotel. It was ridiculous. We asked the bellman what was going on, he said it was Canada Music Week in Toronto that week… Needless to say they hotel was fully booked. So much so that we didnt even get the room we booked (a king size bed). I was kind of annoyed but needed to get a room and get changed and out of there for the big surprise.

I texted (L) saying I really needed to talk to her, and asking her if she would be home around 3? She replied by saying that she was out but she was going to head home right away and be there around 330. (I think I made her panic a little bit) So once i knew she was headed home, we headed to her house as well. Once we got there i rang the doorbell several times, but noone answered, so i finanlly called her and said “do you ever open the door when people ring the doorbell?” Non-chalantly she replied “No, not unless i know someone is coming” I then said “well, ive been ringing your doorbell for like 10 minutes, would you please come down and let me in?” It took her a few seconds and she FREAKED out! It was awesome, she came down and let us in.. She was so shocked!

I had to continue lying to her (which i hate doing) by saying we were in town for a wedding the next day. But the real reason we were in town was for a surprise engagement party tha was being thrown in their honor the following evening. So once again a great suprise was in store.

On the saturday afternoon we headed to some friends house (who had invited them for a “fancy dinner”) the entire wedding party, family and friends were present. We all gathered around the front entrance and got to surprise (L&J) once again!

(L)’s face was priceless, she was so overwhelmed.. I was so glad she was surprised and happy, however I HATED LYING TO HER FACE! It was one thing not telling her i was coming down, but having to makeup an elaborate lie was not pleasant to say the least.

I hope she can trust me again… LOL

I got to see my best friends that weekend, hang out with some old friends, and got to meet new friends, it was an amazing time!

During the non surprising times, the family headed to places like “the St. Lawrence Market”, “the Hockey Hall of Fame”, We had a blast! we even headed to Kitchiner on Sunday morning to visit other friends who had just had a baby.

It was a really quick trip but very enjoyable, and i cant wait to go back (hopefully more often in the coming year and a half as my friends plan their wedding)

Multigrain waffles (Clean of course)

This morning I felt really ambitious and decided to make my monkey and I waffles. A great friend came by with her two girls and it made it that much better to make such a great breakfast. I took out my “The clean eating diet Cookbook 2″ (by Tosca Reno) and found a great recipe for multigrain waffles. I unfortunately didnt have all the required ingredients so i improvised! (not very typical for me, bt it worked in my advantage for once)

So here is the recipe (real one, but with my version in brackets)

Multigrain waffles With raspberry sauce (bananas & Maple syrup)Image

Ingredients:

2 Cups low fat buttermilk (1 1/2 cup  unsweetened almond milk & 1/2 cup lite coconut milk)

1/2 cup Old-fashioned rolled oats

1 cup whole wheat flour

1/2 cup whole grain stone ground corn flour

1/4 cup cornmeal

2 tsp baking powder

1/2 tsp baking sode

1/4 tsp sea salt

1 egg

2 egg whites

1/4 cup raw organic turbinado Sugar (1/4 cup raw honey)

2 tbsp safflower oil (2 tbsp olive oil)

1tsp real vanilla

eat clean cooking spray

raspberry sauce (bananas & Maple syrup)

Mix Milk with oats & Set aside

whisk together flour, corn flour, cornmeal, baking powder,baking soda, and sea salt.

add egg,egg whiyes. oil and vanilla to wet ingredients

mix until well blended but still lumpy.

Spray preheated waffle iron with cooking spray,

drop batter into iron and cook for about 3-4 minutes

Top with sqauce or other topping of your choice
